I would also recommend the Blazing Angels games. I don't know if you're interested but Star Wars: Battlefront 1 %26amp; 2 has very, very good space combat sequences. For that matter, there is also some ariel combat included in the Battlefield franchise as well.
If you have a PS3, you definitely want to look into Warhawk. That probably has exactly what your looking for. If you want to go old school, look up "Terminal Reality". You can probably download it for free somewhere. While it's probably for fairies by today's standards, it was pretty good back in the day and it's all flight.
As far as flight simulators go, the only ones I can really think of are the Flight Simulator games. I bet they stayed up all night thinking of that name. . .Good flight simulator or any other interesting game with piloting? I also like star fighter type a games......

Microsoft Flight Simulator 2004....much better than FSX in my opinion.
